Champion Juicer’s Sorbet Recipe #2
We were having dinner in one of the local restaurant a couple of weeks ago. In between entrée and main course, we were served a small serving of passion fruit sorbet. I tasted different kinds of sorbet before but this one was different. It gave just the right touch to prepare our appetite for the main course. At the end of the dinner, Chef George showed up to find out how the dinner went. I grabbed hold of the golden opportunity to ask him for the secret recipe.
Chef George’s passion fruit sorbet was hand churned every hour for a couple of hours but I tried out the recipe subsequently using Champion Juicer. The result was exceptionally good. Champion Juicer is able to achieve the fine texture and firm consistency one would want in a luscious sorbet.
Passion Fruit Sorbet by Chef George A.

1/4 cup raw organic cane sugar (or less, according to your taste)

2 cups filtered water

1/2 cup Lemon juice

1/2 cup passion fruit pulp

1 teaspoon lemon zest
Boil water, raw organic cane sugar and lemon zest for 5 minutes. Allow it to cool down to room temperature. Peel the lemon and discard seeds before pushing it through Champion Juicer. Stir in the passion fruit pulp and lemon juice into the sugar mixture.
Freeze the mixture in a freezing tray till solid. Slice the frozen mixture into long strips and feed into the feeding chamber of Champion Juicer immediately. You may store the sorbet in a freezer container or serve immediately. Makes 6 servings.
